Ingredients:
1 cup butter (softened)
2/3 cup powdered sugar
2 1/4 cup all-purpose flour (spooned and leveled)
1/2 tsp salt
1 tsp mint extract
1 tsp vanilla
green food coloring
3/4 cup mini chocolate chips
1 cup semi sweet chocolate chips (for top)
Instructions:
Preheat oven to 375 degrees
Beat the butter and powdered sugar together until light and fluffy
Mix in the flour, salt, and extracts until just combined.
Add green food coloring a few drops at a time until the desired color is achieved.
Stir in mini chocolate chips.
Mix until combined.
Line a 9x9 pan with parchment.
Press dough firmly into the 9x9 pan. Pierce top with a fork.
Bake in preheated oven for 20-25 minutes.
Remove from oven and sprinkle 1 cup of chocolate chips on the top and return the pan to the oven for 3-5 minutes, just long enough to softened the chocolate. Remove from the oven. Using a spatula, smooth the melted chocolate over the top of the cookie bars.
You will want to cut the bars before the chocolate on the top is hardened.
Can also be done as snowball cookies.
After dough is made, chill for at least 30 minutes.
Form balls or use a scoop. Place onto parchment lined trays.
Bake for 7-8 minutes.
Cool cookies, then roll in additional powdered sugar.
