2 c. all-purpose flour
3 1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 tsp. salt
1/2 tsp baking soda
1 c. unsalted butter, softened
1/2 c. sugar
1/4 c. firmly packed light brown sugar
1 tsp. pure vanilla extract
In a small bowl, whisk the flour, cinnamon, nutmeg, baking soda and salt together; set aside.
In a large bowl, with an electric mixer on low speed, cream the butter, sugar, and brown sugar together. Add the vanilla extract.
Gradually blend the flour mixture into the butter mixture.
The dough is thick but not too stickey. Spread it in the pan with your fingers.
Press the dough evenly into the bottom of a 9x13 greased pan.
Bake in a 350-degree oven for about 20 to 25 minutes (mine was 25 min), or until golden brown around the edges. Let cool completely before cutting into bars.
